Thanksgiving Ideas

Want to share ideas for Thanksgiving dinner, that can be done in advance? We're having around 25 people for dinner, and I love to prepare early, if possible. I'd love some ideas. Also, some fun, inexpensive table ideas if you'd want to share.

I read of one chef that always cooks 2 turkeys, one the day of dinner, and another one or two days before. She would make the gravy ahead with the neck. She would slice this turkey on a platter so it was ready, then have the other ready for dinner, but serve some, and have lots of leftovers.


This recipe if froom a friend in Portland who said it is published every year in their newspaper because they get many requests.


Make Ahead Mashed Potatoes

5 lbs. potatoes, peeled and quartered (about 15 medium)
6 oz. light cream cheese
1 c. sour cream
2 tsp. onion pwdr.
1 tsp. salt
2 egg whites, slightly beaten, or 1 egg
1 Tb. butter
Cook potatoes. Mash. Add all ingredients but butter. Spray a 9 x 13 pan, or crock pot. Refrigerate up to 7 days. If using the crock pot, remove from fridge 3 hours before reheating. Dot with butter. Heat on low setting, 3 hours, stirring once or twice.

Holiday Traditions



As the holidays approach each year, I start to think about our family traditions to make the holiday special. I think it is fun to share traditions and hear what other families do. What is a holiday tradition that your family has?

A Christmas tradition that our family has is we do not put names on the presents under the tree, instead each present has a number. Only I have the master list of who the numbers belong to. This solved a problem of children counting how many presents belonged to them compared to their siblings or having a curious child open and rewrap their gift. The other thing that I like is we avoid the free-for-all on Christmas morning where everyone rips open their presents without waiting for their turn or seeing what someone else received. We each take turns selecting the gift and I look at my list for the number and the person who it belongs to opens it. After all the time and effort I spend to buy and wrap the gifts, it allows me time to savor the moment and hear what they think when they open their present.

A Word of Caution

Last night our car, which was in the driveway, was broken into. It was around 1 am when our neighbor noticed two guys walking up the street checking things out in the neighborhood. They looked at his son's car and then came across the street and proceeded with their damage, breaking in the window. He yelled and started to chase them but they made it to their car down the street and got away. They were around 18-19 yrs. one had very short hair. The police said they probably were intending to steal the car. Keep your eyes open and watch out for one another. We sure appreciated it!

cooking in fall

Fall draws me to my kitchen...I love the warmth and smells of fall baking. I have found some WONDERFUL recipes perfect for fall!

butternut squash ravioli (from Costco) with a Balsamic brown butter (recipe here)- this was amazing...my kids ate every bite and wanted more the next day...I was so surprised they loved the sauce as much as I did! (They are normally afraid of anything different.)

my new favorite cookie: pumpkin cookies with penuche frosting (recipe here). I have been craving them since I made them...last week!

pumpkin cinnamon rolls: these (recipe here) were really fun to make. yeast usually intimidates me- but I did it! I love Heather's family recipe blog!

I hope if you try any of these that you like them as much as I did!

Solutions

I found a great catalog that carries all kinds of unusual but necessary things. I had a copper sink installed in my kitchen this summer and have been disheartened to see scratches appearing. I haven't been able to find in stores an attractive pad to put in the bottom of the sink. But I finally found a clear, nice looking one at Solutions.com. I was glad to find it. They have all kinds of stuff.

Fitness Class Boot Camp Style

Lauretta gets all the credit for this one, but I thought I'd post it here. She has been doing this boot camp class and after talking to her I decided to give it a go. It is put on by FitCore Fitness (here's the link: http://fitcorefit.com) and is held at the Flips Gymnastics building here in Bountiful. I know several of our neighbors have tried these boot camp classes before and really liked the results. After talking to Lauretta and others I decided to go with FitCore as the pricing seemed better than the other company in our area and people seemed pleased with them.

My first class was last night and I will say it was tough for me, but I figure tough gets results. This week is free to try for anyone who wants to. It normally runs for 6 weeks, but they are offering a holiday special where you get 3 weeks free for a total of 9 weeks. Anyone interested in getting in shape or maybe just upping their game or looking for a twist to their workouts should check out the website. Thanks to Lauretta for telling me about it!

Em's

If you want a scrumptious meal in a really cute, quaint restaurant, that isn't far from home, I'd highly recommend Em's Restaurant near Capitol Hill! About a month ago I asked some friends (Kristen Holm and Joyce Smith) where Kelly and I should take Kelly's mom for dinner for her birthday. They both raved about Em's and I'd never heard of the place! This is probably because Em's is tucked away in a residential neighborhood west of the Pioneer Museum, 271 North Center, to be exact. You've got to try it! They have outdoor dining too for warmer days or nights! Small and intimate, stylish and fresh. Love it! Hint: the duck is amazing, also the Gnocchi appetizer!
